As a busy parent, going back to school is a particularly busy time. One thing I particularly stress over is quick lunch and dinner ideas for Dylan and my family. Enter Kin’s.
I love the idea of serving my family fresh and local meats and vegetables. I like that Kin’s Market supports local farms in the area, so the produce is always fresh, and their carbon footprint is minimal. Kin’s offers the comfort of a farmer’s market with the convenience of having accessible hours. One of the things Jake and I were talking about was that we would to like shop at Farmer’s Markets more often, but can’t because most of them close by 5pm while we’re still at work.
I went to Kin’s website, and found lots of quick and easy recipes online. This is one of my favourites:
Chicken Asparagus Quiche
INGREDIENTS
1 9” pie crust
¼ cup butter, cubed
1 bunch fresh asparagus, chopped
1 medium onion, chopped
1/2 cup sliced fresh mushrooms
1 cup cooked chicken breast, chopped
3 eggs, lightly beaten
2 cups shredded mozzarella cheese
1/4 cup minced fresh parsley
¼ tsp oregano
Salt and pepper
DIRECTIONS
Yields 8 Servings
1. In a large skillet, sauté the asparagus, onion and mushrooms in butter. In a large bowl, combine the eggs, cheese, parsley, and oregano. Season the egg mixture with salt and pepper and then stir in the asparagus mixture and cooked chicken breast. Mix together until everything is well combined.
2. Pour the mixture into crust and bake at 375°F for 25-30 minutes or until a knife inserted near the center comes out clean.

I love Kin’s! I shop there all the time! My fave fall vegetable? Gotta be butternut squash. So much you can do with it; in a risotto, in sweet dishes, but soup is my fave.
