Mark your calendars for Thursday, June 1, as Fairmont Pacific Rim, in collaboration with Westbank, introduces a culinary concept that unites a stellar lineup of Vancouver’s most renowned Michelin Guide chefs. Prepare to be captivated by this exclusive pop-up experience at the vibrant Pac Rim Patio.
Over the course of the season, each featured chef and restaurant will craft a delectable, summer-inspired dish exclusively available for four days at the Pac Rim Patio. Joining forces with resident culinary mastermind Hector Laguna of Botanist, the lineup boasts the talents of Gus Stieffenhofer-Brandson (Published on Main), Lý Nguyen and Vincent Nguyen (Anh & Chi), Andrea Carlson (Burdock & Co), Lee Cooper (L’Abattoir), and Michael Zafirian (Bacaro).

Known as Vancouver’s ultimate gathering space, Fairmont Pacific Rim’s innovative patio concept invites guests to immerse themselves in the culinary tapestry of the city. Each dish represents the rich heritage and inventive cooking style of these esteemed chefs. This initiative is the latest addition to Fairmont Pacific Rim’s commitment to celebrating, showcasing, and supporting artistic excellence in all its forms.
The official summer schedule commences on Thursday, June 1, and continues until Sunday, August 27. As an added bonus, for every featured chef dish sold, a portion of the proceeds will be donated to the BC Hospitality Foundation, further enriching the local community.

In addition to the weekly rotation of guest chef dishes, Executive Chef Damon Campbell’s food truck will be rolling in, offering a delectable summer menu perfect for outdoor dining. To complement Campbell’s creations, Creative Beverage Director Grant Sceney has curated an enticing assortment of refreshing Malfy Gin cocktails, including classic G&Ts, spritzes, and other delightful summertime sippers. Plus, an extensive selection of craft beers and local and international wines awaits your palate.
The Pac Rim Patio welcomes you from Wednesday to Sunday, from 12:00 p.m. to 8:00 p.m. Immerse yourself in the vibrant ambiance with live music enriching your experience every Friday and Saturday until 8:00 p.m., and Thursdays and Sundays until 6:00 p.m.
Seating at the Pac Rim Patio Pop-Up operates on a first-come, first-served basis and is subject to weather conditions.
Rain or shine, you can always count on The Lobby Lounge & RawBar for daily service starting at 11:00 a.m. and lasting until late.
