Botanist Bar, Vancouver’s award-winning cocktail destination, unveils its latest immersive experience. It is called The Water of Life (Eau de Vie). This menu is the creation of Botanist’s Cocktail Lab. It merges science, nature, and artistry. The goal is to explore water’s essential role in both life and libations. Featuring four meticulously crafted Botanist cocktails, this experience presents each with a complementary bite. It invites guests on a journey of discovery.

A Vision of Alchemy and Flavour

Guided by Creative Beverage Director Grant Sceney and Executive Chef Hector Laguna, Eau de Vie is an exploration of technique, flavor, and storytelling. Each cocktail is carefully paired with a bite designed to elevate the tasting experience. Together, these pairings unfold in layers, creating a seamless blend of flavours that evolve with every sip and bite.

The Four Unique Botanist Cocktails

Inspired by the Pacific Northwest and crafted with locally sourced ingredients, each cocktail offers a unique interpretation of water’s influence.

  • Pale Blue Dot – A tribute to all the water on Earth, this vibrant blue cocktail features Pacific Ocean blue algae, oyster shell gin from North Vancouver’s Copperpenny, oyster leaf distillate, and lacto-fermented cucumber pineapple syrup.
  • The Ring of Fire – Showcasing water vapour’s impact on tropical botany, this cocktail blends 12-year-old rum, Canadian Rye Whiskey, and melon liqueur, yogurt-washed and clarified in a centrifuge. Passionfruit distillate, vanilla, and lemon cordial add a tropical finish.
  • Raincouver – Inspired by Vancouver’s rainy climate and lush foliage, this light cocktail features vodka, yuzu, pine, aperitif wine, and citrus, topped with Perrier. It’s served with an edible cherry blossom cloud that floats above the drink.
  • Earth’s Energy – A celebration of water’s role in nurturing flora, this bright mix includes blanco tequila, Esquimalt vermouth, Woods Distillery amaro chiaro, and chamomile elderflower. The cocktail’s flavors evolve as it warms, mirroring spring’s blooming flowers.

Since 2018, Botanist’s Cocktail Lab has pushed the boundaries of mixology by integrating cutting-edge culinary techniques. Equipped with tools like rotary evaporators and centrifuges, the lab is a hub for sustainable, ingredient-driven cocktail innovation.
