This summer, Fairmont Waterfront is turning up the heat. They are cooling things down with the launch of an exclusive Artisanal Ice Cream Pop-Up. This event is in collaboration with HYPE Chocolate and located right next to ARC Restaurant’s patio in downtown Vancouver.

HYPE Chocolate was founded in 2022 by Scott Symons and Marlayna Pincott. It has quickly built a reputation for bold flavours. The company is known for playful, purpose-driven desserts. This latest partnership blends their creative approach with Fairmont Waterfront’s signature coastal luxury and commitment to sustainability.

Both brands share a focus on ethical sourcing and community impact. HYPE Chocolate sources its cacao through Cocoa Horizons, ensuring its ingredients are ethically and sustainably produced. Fairmont Waterfront is equally committed to eco-conscious hospitality, as reflected in its ‘5 Green Key Hotel’ rating from Green Key Global.

To celebrate the collaboration, the pop-up features a lineup of flavours unique to Fairmont Waterfront:

  • Lemon, Wildflower Honey & Thyme Sorbet – a tribute to the hotel’s rooftop garden and honeybee apiary.
  • Salted Chocolate Ice Cream – made with sea salt from Vancouver Island, echoing the property’s coastal roots.
  • Vanilla Bean & Brown Butter Croissant – finished with edible gold, delivering a rich, luxurious finish.

Guests can expect a rotating choice of seasonal flavours throughout the summer, along with HYPE’s signature B.C. berry cups topped with warm chocolate—an indulgent summer treat.
