Week one of the Paleo Challenge: So far what I crave the most are carbs. Sweet, delicious carbs. Oh, and the sugar, there’s that too.

So what happens first thing in the morning, when all I want is sugars and carbs to get me going?

I found this excellent Paleo recipe to help me:

Almond -Meal Blueberry Pancakes

  •  two cups almond meal
  • 1/2 cup shredded unsweetened coconut
  • 3 eggs
  • one cup coconut milk
  • 2 tablespoons coconut oil
  • 1 apple, grated
  • 1 cup fresh organic blueberries
  • 3 tablespoons cinnamon
Mix all the ingredients together, heat the skilled and grease it with coconut oil. Using about 1/4 cup scoops, cook the pancakes for approximately 4 minutes each side, until brown and crispy. Serve with fresh blueberries on top, and a sprinkle of cinnamon.

The biggest challenge with this recipe won’t be in the kitchen. It’ll be trying to find the ingredients. The almond meal can be found at Whole Foods or any organic grocer.

The pancakes do not hold their shape well, so don’t worry if they don’t look picture perfect. They are tasty thought! Let me know if you try this at home, and how they turned out.

  1. I’m not on paleo diet, but I’m gluten/dairy free, so that fits right up my alley. And I have all the ingredients on most days. Look delish!
