Isn’t Prosecco the perfect brunch drink? The bubbles add a touch of class to any gathering.
I was given a bottle of La Marca Prosecco to experiment with. I was in love after one taste. La Marca has notes of citrus and peach and has a light, floral aroma. It’s sublime, and at less than $20 a bottle, it’s very affordable.
La Marca Prosecco got its name after the La Marca Trevigiana zone, located in the heart of Italy’s Prosecco region, where grapes for their Prosecco are grown. Founded more than 40 years ago, La Marca winery joins tradition and innovation, crafting award-winning Prosecco that captures the essence of the region in every bottle. The result is a sophisticated, bright sparkling wine that adds affordable luxury to any gathering.
I invited my sister over for some brunch this weekend. We had so much fun making hollandaise sauce from scratch, and making raspberry french toast roll ups (Thanks Blogilates for the yummy recipe!). We also enjoyed our lovely bottle of La Marca Prosecco. Of course being the budding mixologist that I am, I decided to experiment with a cocktail recipe.
I bought a bottle of Elderflower Liquor from Pemberton Distillery. This small distillery has an online store where you can buy an assortment of organic, small batch spirits. Nothing less than that was good enough for my bottle of La Marca.
La Marca Elderflower Fizz
Ingredients:
1/2 part Elderflower Liqueur
Top with La Marca Prosecco
Add Elderflower Liqueur to the bottom of a chilled champagne flute and top with La Marca Prosecco.
Simple and delicious.
Another use for La Marca Prosecco? How about making a Prosecco reduction? Here’s the recipe share by Kevin Prendergast, Executive Chef at the Hilton Toronto.
La Marca infused ricotta cheese with herbs, Canadian Prosciutto, wild flower honeycomb, toasted walnuts, and figs glazed in La Marca Prosecco, orange zest.
Ingredients:
500 mL (2 cups) La Marca Prosecco
15 mL (1 tsbp.) wild flower honey
2-3 fresh or dried figs
125 mL (1/2 cup) ricotta cheese
3-4 slices prosciutto
3-4 pieces toasted walnuts
1 wild flower honeycomb
chives, edible flowers, to garnish
Methods:
La Marca Prosecco Reduction:
500 mL (2 cups) La Marca Prosecco
15 mL (1 tsbp.) wild flower honey
Combine both ingredients together in sauce pan over medium heat (275F) and reduce until light golden syrupy consistency about 1/4 of a cup remaining and cool to room temperature.
Glazed Figs:
2-3 fresh or dried figs
30 mL (2 tbsp.) La Marca Prosecco reduction
Gently toss the fresh or dried figs into the La Marca Prosecco reduction and set aside to marinate.
La Marca Prosecco Spiked Ricotta with Fresh Herbs:
125 mL (1/2 cup) ricotta cheese
5 mL (1 tsp.) La Marca Prosecco reduction
Handful of chopped chives
Combine ingredients in a small mixing bowl and mix well, season with salt and pepper to taste and set aside in the fridge.
Plate assembly: With a small spatula, spread 50 grams of La Marca infused ricotta. Place 3-4 slices prosciutto, 3-4 pieces toasted walnuts, wild flower honeycomb, and edible flower garnish on the La Marca ricotta in an artistic fashion. Serves two as a shared plate. Enjoy!
