Inclusive Holiday Entertainment Made Easy #Recipes

What do your vegan sister, your vegetarian best friend and your gluten-intolerant brother-in-law have in common? They’re all coming over this Christmas.

But don’t despair, holiday entertaining can not only be inclusive, it can be delicious! 

First things first: quality ingredients: I did my shopping at Choices Markets.

Next, I looked for recipe inspiration from TO’s own celebrity dietitian, food, and recipe writer Abbey Sharp from Abbey’s Kitchen.

I picked a few recipes that I think everyone on your party list will enjoy.  Happy holidays!

PARMESAN PESTO PIZZA TWISTS

These are so tasty and so easy to make – and they’re gluten-free and vegetarian. Although Choices Markets doesn’t carry Sabra Hummus, I wanted to be true to Abbey’s original recipes that called to use this brand. There are many other tasty alternatives available at Choices Markets though!

Ingredients
  • 1 lb gluten-free pizza dough (You can make it by substituting wheat flour with gluten-free flour)
  • ¼ cup pesto
  • 2/3 cup parmesan cheese
  • 2 tsp garlic powder
  • ½ tsp red pepper flakes
  • 3 tbsp olive oil
Instructions
  1. Preheat your oven to 425 F and roll out the pizza dough on a lightly floured cutting board.
  2. Combine the parmesan, garlic, and red pepper flakes in a bowl and sprinkle half of it onto the dough.
  3. Spread the pesto out over the dough then cut the dough into 12 thin strips and twist the strips.
  4. Brush with olive oil and sprinkle with the parmesan again, then turn around to brush and sprinkle the other side.
  5. Bake for 8-10 minutes until golden brown and serve with Sabra’s Supremely Spicy hummus!

CRISPY BAKED SWEET POTATO CHIPS

Ingredients:
  • 1 medium sweet potato scrubbed and sliced thin on a mandolin (1/16th inch)
  • 2 tsp olive oil
  • ½ tsp smoked sweet paprika
  • ¼ tsp salt
Instructions
  1. Preheat your oven to 425 F. Toss the sweet potatoes into a bowl and toss with oil, paprika, and salt.
  2. Place on two baking sheets and bake until golden brown, about 12 minutes. Allow to cool for 3 minutes until crisp.
  3. Dip into Sabra’s Roasted Garlic hummus.

VEGGIE CHRISTMAS TREE PLATTER

Ingredients:

  1. 1 head of broccoli
  2. black olives
  3. green olives
  4. 1 red pepper
  5. 1 stack of celery

Instructions:

Arrange the broccoli in the shape of a Christmas tree. Use the red pepper to create “tinsel” and the olives to create ornaments. Use Sabra Hummus for dipping.
