VANEATS Presents: #SpringFling at Mosaic Restaurant

I’m so sad that this will be last dining package. But the guys are going out with a bang and have paired up with Mosaic Bar and Grille one last time to bring you a delicious and affordable spring menu.

Mosaic Grille focuses on locally sourced produce, sustainable seafood and fresh ingredients with creative preparation. The Spring Fling Dining package offers dishes that are just that. Beautifully presented and made with seasonal and sustainably sourced products.

The package consist of three courses with your choice of the following:

For starters, your choice of the Earth Apple Farms Mixed Kale salad with radishes, carrots and tossed with a Garlic Scape dressing.  The kale is mixed with some seasonal greens and pickled radishes for extra flavour.


The White Asparagus Bisque with parmesan lavash. The white asparagus is milder in flavour compared to its green counterpart. The texture is rich and creamy and simply decadent. The dish was garnished with an edible flower called “Bachelor’s Boutonniere”. Simple but effective.


The package offers three options for a main course:

BC Bouillabaisse with Spring Salmon, Salt Spring Island mussels, manila clams, sugar snap pea, charred scallion, fennel, and new potatoes. The rouille sauce was so creamy with a slight garlic taste.  This dish is a wonderful representation of all the great seafood BC has to offer.


If seafood is not your cup of tea, then perhaps the Braised Maple Ridge Farm Veal Cheeks with Stinging Nettle Pasta with asparagus tips and morel cream sauce.


The package also offers a wonderful vegetarian option: The Green Garlic Quinoa Risotto, with fiddlehead ferns, fava beans, green peas, and watercress. fiddlehead ferns are surprisingly tangy and cripsy. I’ve never had one and I really enjoyed them!

DSC_0010For dessert, Mosaic is offering the fabulous chocolate cake again. This cake is so rich – it truly is decadence on a plate. This is one of my favourite desserts in Vancouver.


If the chocolate cake is not temptation enough, the Maple Espresso Creme Brûlée with Dark Chocolate Bark is guaranteed to satisfy your sweet tooth.


I love the packages, and their Mosaic partnership is one of my favourites. This package showcases West Coast cuisine so well, and their use of seasonal and sustainable ingredients is nothing short of inspired.
