Copper Chimney #TacoChallengeYVR

Copper Chimney Restaurant is located beside the Le Soleil Hotel Downtown. They focus on contemporary Indian cuisine with a West Coast twist.

The restaurant is really beautiful. High vaulted ceilings and an open kitchen concept make the restaurant feel bigger than it actually is.

For Richard Wolak’s Vancouver Taco Challenge, the restaurant created The Goa Fish Tacos ($18 for 3).

Goa is a state in western India with coastlines stretching along the Arabian Sea. That’s what Chef Jaroslaw Faryna used for inspiration when creating his dish. Using halibut as a base, he takes the fish and marinates it on tandoori spices for a few minutes before cooking. He then combines wasabi mayo with Indian spices and serves the fish topped with mango and pineapple salsa and red cabbage on a corn tortilla.

Another reason to visit Copper Chimney is their Happy Hour Menu available Monday through Friday 3–6pm & Saturday, Sunday 5-7pm. I ordered this Butter Chicken Poutine for only $5! They also have beer and cocktail specials. Totally worth it!
