I went to Staff Meal at Chambar on a Monday with Michael, not entirely sure what to expect, and left thinking how rare it is to sit down with strangers and actually talk.

If you’ve ever worked in a restaurant, you probably know what a staff meal is. It’s that moment before service when everyone sits down together, eats, and resets. Chambar has taken that idea and opened it up to guests, and it works in a way that feels both simple and meaningful.

Michael and I ended up at one of the long communal tables. No reservations, just first come, first served. At first, it felt a little unfamiliar, sitting beside people we didn’t know, but that didn’t last long. Conversations started naturally. Nothing forced, just easy back and forth. By the time the food arrived, it felt like we were all part of the same table, not separate groups.

I really liked that.

Chambar has always been one of those places I come back to. It’s been part of Vancouver’s dining scene for over two decades, originally opening in Gastown before moving to its current home on Beatty Street. Known for its Belgian-inspired menu, strong coffee culture, and warm, energetic room, it’s a restaurant that has always balanced quality with a sense of welcome. This new Staff Meal program feels like a natural extension of that.

The format is straightforward. Every Monday starting at 5pm, they serve a set menu for $28 per person, excluding drinks, tax, and tip. This is a 3-course meal at a Vancouver restaurant, you can’t even get a cocktail for that price nowadays, so the price is not only surprising, it’s revolutionary.

It’s communal seating, no reservations, and everyone in your group needs to be present to be seated. Because the food is cooked in large batches, there aren’t substitutions or dietary accommodations, so it’s really about coming in open and just experiencing what the kitchen has prepared. The menus are posted on their website for the following Monday.

We started with a Caesar salad. It had that balance of savoury and fresh that made it feel a little lighter than expected.

Then came a pasta dish with finished with a hearty bolognese sauce. This was the kind of dish that felt familiar right away. Warm, hearty, and exactly what you want when you sit down at a long table with a group of people.

Dessert was Tiramisu, a espresso cake served with cream. It was rich without being too much, and it ended the meal on a really nice note.

What stayed with me wasn’t just the food, though. It was the feeling of sitting there, talking to people I had never met before, and realizing how easy it can be when the setting is right. We shared conversations and more than a few laughs. At a time when a lot of things feel a bit disconnected, this felt like the opposite. Just a table, a meal, and a bit of conversation.
