Raspberry Chicken Salad #Recipe paired with Granville Island’s False Creek Raspberry Ale
Summer, long weekend and beer! What a great combination. Nothing says summer like a nice cold beer. And you know what else? Fresh BC berries.
With strawberry season almost over and raspberry season in full swing, Granville Island Brewing has released its new False Creek Raspberry Ale.
This is a great summer beer – very refreshing with a clean and crisp raspberry taste, yet still with enough malt flavour to taste like a beer and not a cooler. Goes great with salads. Which is what I made:
This is a simple and tasty recipe for a nice summer salad.
Free-range Chicken Breast – 4 x 2 oz portions
Raspberries – 2 cups
Lemon zest – 1 tsp
Mixed Greens – 1 pound
Avocado – 1 diced
Toasted Hazelnuts – 1/2 cup
Eggs – 4 poached
With the abundance of fresh berries out there, why not make your own raspberry vinaigrette to go with your salad?
Raspberries – 1/2 cup, crushed
Olive Oil – 1/2 cup
White Wine Vinegar – 1/4 cup
Dijon Mustard – 1 tsp
Salt and Pepper – to taste
Mix all ingredients together in a food processor for about 40 seconds.
Take half of the raspberries and mash in a bowl with lemon zest. Marinate chicken breasts in raspberry mash overnight. Pat chicken dry on paper towel and grill on BBQ until cooked through. Toss the remaining raspberries with greens, avocado and hazelnuts. Dress lightly with the raspberry vinaigrette. Serve with chicken and a poached egg.
I added more vegetables to my salad, like cucumbers and tomatoes. I served this on my Canada day get together and it was a big hit! The raspberries gave the chicken lots of flavour; and it was perfectly paired with the beer!
